Procedures
Pre-heat oven to 375ºF.
- SEASON pork with garlic, rosemary, sage, extra virgin olive oil, salt and pepper. Allow to sit in marinade for 30 minutes.
- PLACE potatoes on sheet tray and roast for approximately 30 minutes, or until fork tender.
- GRILL marinated pork approximately 4-5 minutes on each side, scoring with diamond-shaped marks. Cut into slices.
- SERVE pork garnished with roasted potatoes.
